I do understand your concern when it comes to removing the leaves of an active growing vine to force dormance. Removing the leaves will not kill the vine for sure and I don’t think it will be killed by the sun or high temperatures as well.

What happen to strong sun light, hot weather and frequent heavy rain fal, will these kill the grape when all the leaves removed?
Should I cover the root areas from rain fall? or Should I cover the plant from direct sunlight?
